It’s beginning to look a lot like……..Canning Season! However, I would be even more ready had a deer not destroyed my garden at the beginning of Summer! I was able to replant many things but I’m disappointed that I won’t have as many tomatoes and peppers that I need to make a few batches of salsa. I’ll have to settle for just one or two batches instead. My Aunt shared her recipe with me years ago and it’s a favorite of the whole family. I’ve tried a couple others and always come back to this particular one.
Aunt Rocky’s Canned Salsa:
25-30 Tomatoes
5 Jalapeño Peppers
8 Green Peppers
2 Large Onions
2 (15 ounce) Cans Tomato Paste
1 Cup Vinegar
1/4 Cup Canning Salt
1/2 Cup Sugar
Cut an x in the bottom of each tomato and place them (x side down) in a shallow pan of boiling water. Cook for about 10 minutes until the tomato is easily “skinned”. Place skinned tomatoes along with the rest of the ingredients into a large pot. Cook to a boil and then continue cooking and stirring until thick, about 15 minutes. Place in Ball Canning Jars and seal. Simple and absolutely delicious!

I love the drinking mason jars with the sip & straw lids…they are so cute and I love that they are glass so none of the yucky chemicals that come with plastic are involved when drinking from them.
