Next Sunday is Easter. It also happens to be my youngest daughter’s eighth birthday! We plan to have a special Easter brunch and birthday party. For this special day, I needed a fresh salad to go with our meal. I wanted to try something new so,  I went to the Nutrisystem Leaf website and found one that I thought we would enjoy. I plan to make the Nutrisystem Balsamic Beet Salad. The website photo makes this salad look so bright and refreshing. I can’t wait to give it a try.

Ingredients-

2 cups of arugula
1 cup of beets
1 oz. crumbled goat cheese
1 tsp. olive oil
1 Tbsp. Balsamic vinegar
Salt/Pepper, to taste

Directions-

This really could not be any easier to prepare. If fact, if you have young chefs in your family, let them prepare this dish. Kids are more likely to eat their veggies if they helped prepare them. This is especially true with veggies they have never tried before.

Top arugula with beets and goat cheese. Then, drizzle with olive oil and balsamic vinegar. That’s it! This recipe makes one serving. On your Nutrisystem plan, it counts as 1 PowerFuel, 2 Extras, and 4 Vegetables.

    Panera Bread had an awesome Roasted Beets and Citrus Salad that was sooooo good. I went there about a week ago so excited because I finally got the chance to go have it and they no longer carried it. I tell ya, add fresh spinach and kale, plus some mandarin oranges to your salad and then send up a thank you to the heavens because it is a God- sent recipe, part Panera, part mine, and part yours. Yum!!!

    This sounds really good – we already have the Easter menu set but I would try this with grilled burgers or chicken. I would definitely switch the goat cheese for maybe feta – just not a goat cheese fan.

    This recipe looks good. My husband is a beet fan. It may be a way to encourage him to eat mmore of what is good for him. Hes like a little kid!

    Did not know they had a recipe site…. this salad looks good but I have never had beets. Have no idea how to even fix them. Heard they make your hands red 🙂

    I like this recipe but think I would switch it out with feta too. I think feta would lend itself better to it and be a bit more mellow. Some goat cheeses are pretty strong. I do love the color and also the salad itself.
