Summer is finally here! Today we are expecting a high temp near 100º.

One of my favorite parts of summer is our garden. This year, we expanded our garden; it is now approximately 40″x60″. We plant several goodies in our garden- strawberries, rutabagas, watermelon, cantaloupe, radishes, beets, turnips, potatoes, salad greens (red leaf lettuce, spinach, collard greens, mustard greens, kale and more), onions, cauliflower, celery, broccoli, corn, cucumbers, and an assortment of peppers. We also have a few fruit trees- apples, pears, plums. This year, I have two new blueberry plants and new raspberry plants. We love having homegrown fresh produce! We share with our family and friends plus, I try to freeze or can as much as possible.

Having fresh produce literally right outside my back door is so inspiring. I enjoy going out to the garden to see what needs harvesting and then creating my menu from there. It is incredibly satisfying to be able to feed my family with nutritious produce that I grew with my two hands.

One of my favorite garden fresh meals is a salad with a variety of greens, strawberries, feta cheese, nuts (whatever is on hand…usually raw almonds) and homemade Balsamic Vinaigrette dressing. My dressing recipe was inspired by a Balsamic Vinaigrette recipe I found on the Nutrisystem website. For my dressing, I combine 2/3 cup avocado oil, 1/3 cup balsamic vinegar, 1 clove garlic, minced, 1 Tbsp. local honey, ½ tsp. salt and a lot of fresh cracked black pepper. This salad is delicious! The fresh greens with bright flavors of strawberries and feta combined with the crunch from the nuts is perfect in every way. This salad makes a great flex lunch and/or flex dinner.

    I wish I could grow so many vegetables. I have a very small raised garden. I will try that Balsamic Vinaigrette recipe too. Thank you.
