Our oldest daughter is twelve now and has been really interested in baking lately.  She’s been checking out a ton of books from the library and creating all kinds of yummy goodies for everyone to try.  I love seeing her so excited about something as this passion drives her to be diligent.  She spends hours going over recipes and trying new things.  Since we homeschool, she has plenty of extra time in the day to add this to her activities.  (Plus, I consider it Home Economics!)

Cookie Time

This time, she was on a cookie kick and tried her hand at Melt Away Cookie Bites.  While I think they could personally use a little more pizazz, the kids all thought they were great.  If I were to make them, I think I’d throw some mini-chocolate chips in the batter!

Ingredients
  • 1 cup butter, soft
  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 2¼ cups flour, sifted
  • ¼ teaspoon salt
  • Additional Powdered Sugar
  • (Optional: Mini-Chocolate Chips)
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine butter, sugar, and vanilla in a medium sized mixing bowl.
  3. Sift flour and salt together and gradually stir into butter mixture. (This is also where you'd add the mini chocolate chips if you so choose.)
  4. Use a small cookie scoop and drop onto un-greased cookie sheet.
  5. Bake for about 15 minutes or till peaks are light brown.
  6. Transfer to cooling rack and sprinkle with additional powdered sugar.
  7. Serve.

I think these would be especially great served at a young girls birthday party or tea party along with some delicious pink lemonade!  These bite sized cookies are so easy to eat and really offer that dainty, fun feel.

    I think they could use some lemon zest and that could possibly add the pizazz that you are looking for but I add lemon zest to just about everything lol.

    These look good.I always enjoy seeing kids in the kitchen it isnt just about baking! he is learning to follow directions, measurements and youre right it certainly is home ec! I think besides plain, or with chips these would lend themselves well to a bit of fanciful frosting, or a dusting of powdered sugar. They are dainty, bu I bet awfully good.

    I just LOVE this. To this day I have such a fear of the kids in the kitchen. We had a house fire a few years back that started with only me boiling water for spaghetti but it caused the vents above to get hot and grease dripped on the burner. This recipe is easy enough that I think with a good attitude I would be ok to watch them make.
