A few months ago we tried a meal service that had peanut sauce stir fry as one of the meal options and our entire family loved it! Even though that recipe had a bunch of items we don’t typically buy, I wanted to attempt my own peanut stir fry with fewer ingredients. Needless to say, it was a HUGE hit! The whole family was thrilled when I told them what we were having, and it was so simple to make. Check out the full recipe below!

Thai Peanut Sauce Stir Fry

This stir fry recipe takes very few ingredients which is ideal for our busy family. There’s nothing I hate more than finding a recipe that sounds good and then needing 20 different ingredients that I’d regularly never buy. I much prefer recipes with few ingredients and simple instructions!

One issue our family usually has with stir fry is that it can be too spicy for our kids. While the sauce in this recipe does have a good kick, it’s really muted by the lo mein noodles and the vegetables. Even our daughter, who is particularly conscious of spicy things, loves it.

When I make this recipe I start by slicing up some chicken and frying it in oil. This week I’d already cooked chicken thighs in the crock pot so I started with the vegetables instead. I sliced up three peppers and cooked them in oil for about five minutes before adding the chopped broccoli. I cooked the vegetables for about ten more minutes, until they were soft.

While I cooked the vegetables, I brought a saucepan full of water to a boil and added the noodles. These lo mein noodles only have to cook for about 3-5 minutes to reach the right texture, so keep that in mind.

Once I put the noodles in the water, I added my shredded chicken to the vegetables and heated until the chicken was warm. Then I poured the Thai peanut sauce (the whole bottle) into the mixture. I usually let my family decide how many noodles they’d like in relation to their stir fry mixture, so we don’t mix them. However, you could if that’s how you prefer to do it! We use coconut aminos in place of soy sauce for a little burst of flavor! Here’s the full recipe for my Thai Peanut Stir Fry.

Simple and Quick Thai Peanut Sauce Stir Fry Recipe

This Thai Peanut Sauce Stir Fry is very simple and quick, and has less than ten ingredients! It's a dish the whole family will love.
Ingredients
  • 2 Tbsp. Olive Oil
  • 4 Chicken Thighs (or breasts if you prefer white meat)
  • 3 Peppers
  • 1 Head of Broccoli
  • 1 Bottle of Thai Peanut Sauce
  • 1 Bag of Organic Lo Mein Noodles
  • Coconut Aminos to taste
Instructions
  1. Begin by cutting the chicken thighs into bite sized pieces and heat in olive oil until fully cooked.
  2. While the chicken is cooking, slice peppers and cut broccoli into bite sized pieces.
  3. Using about 2 Tbsp of olive oil, begin cooking the peppers. When they start to get soft, add the broccoli and cook about another ten minutes.
  4. Meanwhile, boil water in a saucepan. When it comes to a boil, add the lo mein noodles and cook as instructed on the package.
  5. Mix the chicken in with the vegetables and pour the bottle of Thai peanut sauce into it.
  6. Serve the stir fry mixture over the noodles, and add coconut aminos to taste.
  7. Enjoy!

I hope you enjoy this recipe as much as our family does! With rich flavors, I feel like it’s a fairly healthy option with the chicken and vegetables. While the peanut sauce tends to be a bit high in sodium, the coconut aminos will give you a bit of room if you were to use soy sauce regularly. This meal has become a staple in our house and we have it at least once a month now! I love finding flavorful meals that the whole family enjoys, and I hope you’ll like it to!
