As you’re cleaning out your pantry, you’ll probably find a variety of foods.  Hopefully none too far expired though!  That’s always my biggest fear.  I hate the thought of wasting money by not eating what I’ve purchased.  However, I will admit I’m not a ‘best if used by’ ninja.  I still pop it open and if it looks good, smells good, and tastes good, we usually will still eat it.  But as I’ve cleaned out my pantry in the past, I do discover some odd items that I struggle to find a use for.  One of those things is Canned Yams, which my mother-in-law passed on to us.  So today, I’ve compiled a variety of ways to share with you on how best to use them.

  1. Whip up a batch of Sweet Potato Muffins.  Which also freeze well if you can’t eat fast enough.
  2. Sweet Potato Pie is always a good choice!  (Country songs don’t lie right?)
  3. Warm them up and top with a little butter, cinnamon and sugar.
  4. Add to a homemade soup.
  5. Bake them with onion and garlic.
  6. Mix with hash browns and eggs and fry like a pancake.
  7. Mash and add to a cupcake batter for flavor and to create a more moist cupcake.
  8. Add to your ice cream maker for your next batch of ice cream.
  9. Sweet potato bars.  There are lots of variations online if you google for a recipe.

Black Eyed Sweet Potato Sliders
 
Ingredients
  • patty:
  • 3 cups cooked black eyes peas (2-15oz cans)
  • 1½ cups sweet potato, mashed
  • 1-2 Tbsp tahini
  • spices/seasonings:
  • 1 tsp salt (add ¼ tsp at a time to taste)
  • ¾+ tsp spices (your choice! I used Tony Chachere’s Creole Seasoning, but Slap Yo Mama seasoning is good, too)
  • a few dashes fine black pepper
  • 2+ Tbsp nutritional yeast
  • 1-2 tsp oil (if baking, fold the oil into the patty mixture, if sautéing add the oil to the pan
Instructions
  1. Bake, peel and mash your sweet potato. (Or drain and rinse the canned ones.)
  2. Add to large mixing bowl.
  3. Rinse and drain the black eyed peas. Add to large bowl along with the remaining patty ingredients.
  4. Using a large fork or potato masher - mash the contents of the bowl.
  5. If baking, heat oven to 350 degrees. If using stove top - heat 1 tsp oil in large saute or grill pan.
  6. Form slider patties - about golf ball sized scoops of mixture.
  7. Baking: 350 degrees for 15 minutes for sliders. Larger burgers take about 22 minutes.
  8. For sauté: cook about 3 minutes on each side - you want the outside to be toasty brown while the inside stays moist yet heated through.

    Great ideas!! I love sweet potatoes! We have some fresh one’s I’m going to cube and bake with olive oil, tarragon, and salt tonight! I love the sweet potato pie and bars ideas. I’ve never made those… I’ll have to give it a try soon.

    As old as I I have never been creative with sweet potatoes these sound like a lot of great ways to enjoy sweet potatoes. I was watching video on face book with Michael Symons and he made sweet potatoes & black bean stew. I made it and loved it. So I am on a hunt for new ways to enjoy

    Sweet Potatoes are good for you! We enjoy them mashed with butter and a bit of honey. Sweet potatoes make for a great side dish I think super good with pork or chicken/turkey. Love the pies but I do not make thm often.

    For some reason I have some can in my cabinet don’t remember buying them. Maybe for a holiday but never used. This gives me ideals on what to do with them I think the sweet potato slider would be good…………….. will try this weekend
