Simple and Quick Thai Peanut Sauce Stir Fry Recipe

     Serves: 6-8 servings
  
       - 2 Tbsp. Olive Oil
  - 4 Chicken Thighs (or breasts if you prefer white meat)
  - 3 Peppers
  - 1 Head of Broccoli
  - 1 Bottle of Thai Peanut Sauce
  - 1 Bag of Organic Lo Mein Noodles
  - Coconut Aminos to taste
  
      - Begin by cutting the chicken thighs into bite sized pieces and heat in olive oil until fully cooked.
  - While the chicken is cooking, slice peppers and cut broccoli into bite sized pieces.
  - Using about 2 Tbsp of olive oil, begin cooking the peppers. When they start to get soft, add the broccoli and cook about another ten minutes.
  - Meanwhile, boil water in a saucepan. When it comes to a boil, add the lo mein noodles and cook as instructed on the package.
  - Mix the chicken in with the vegetables and pour the bottle of Thai peanut sauce into it.
  - Serve the stir fry mixture over the noodles, and add coconut aminos to taste.
