This delicious Double Chocolate Zucchini Bread is filled with moist, gooey chocolate and absolutely melts in your mouth. It's packed full of zucchini and will be a big hit with anyone who loves cake-like bread in your life.
1 cup flour
½ cup cocoa
1 tsp baking soda
½ tsp sea salt
2 large eggs
¼ cup melted butter
¼ cup melted coconut oil
¾ cup light brown sugar
1 tsp vanilla extract
1½ cups shredded zucchini
1 cup of milk chocolate chips, divided
Preheat oven to 350 degrees Fahrenheit.
Grease the sides and bottom of a 9x5 loaf pan.
Mix flour, cocoa powder, baking soda, and sea salt in medium bowl; set aside.
In a large bowl, stir together eggs, melted butter, oil, vanilla extract, and brown sugar.
Stir the dry ingredients into the wet ingredients
Stir shredded zucchini and ¾ cup of the chocolate chips into the mix.
Pour batter into 9x5 bread pan.
Sprinkle ¼ cup chocolate chips on top of the bread.
Bake for 50-60 minutes, until a toothpick comes out clean.
Remove pan from oven and allow your bread to cool in the pan on a wire cooling rack for 15 minutes.
Use a knife to separate the bread from the edges of the pan, and place bread on a wire cooling rack after removing from the bread pan.
