Salmon with Fresh Avocado Pesto Salsa Recipe

Delicious wild salmon pairs with a fresh avocado pesto salsa for a refreshing dinner. Pair it with a grain or fresh steamed veggies for a complete meal!
Ingredients
  • 2 Tbsp. Olive Oil
  • 2 Tbsp. Lemon Juice
  • 2 Cloves Garlic, Minced
  • 1 tsp. Salt
  • ½ tsp. Black Pepper
  • 1 Large Salmon Filet
  • 3 Ripe Avocados
  • 1 Pint Grape Tomatoes
  • 2 Tbsp. Pesto
Instructions
  1. Preheat oven to 400° Fahrenheit
  2. Slice salmon filet into even sized pieces and arrange on an aluminum foil-lined pan
  3. Mix together oil, lemon juice, minced garlic, salt, and pepper
  4. Brush salmon with above mixture and place salmon in oven
  5. Bake for 15-20 minutes, checking around the 15 minute mark - salmon will be pink and flaky when done
  6. While salmon is baking, dice avocados into a bowl
  7. Quarter the grape tomatoes and add to avocados
  8. Stir pesto in with the avocados and tomatoes, blending well but leaving chunky
  9. When salmon is finished, serve over a bed of farro or rice and top with avocado pesto salsa
  10. Enjoy!
