This delicious homemade chicken dumpling soup recipe has tons of flavor and is a great option for a quick weeknight meal. Made in the instant pot, it's a family favorite!
Ingredients
For the soup:
2 Tbsp. Olive Oil
1 Diced Onion
1 Cup Diced Carrot
1 Cup Diced Celery
1 Bay Leaf
4 Cups Chicken Broth
2 Pounds Chicken (I used breasts but a combination of breasts and thighs would be great also!)
Add chicken broth, chicken, thyme, salt, and pepper. Close and lock Instant Pot lid. Choose the manual function and high pressure, and set timer for 9 minutes.
Once your timer goes off, release pressure using the quick-release method. Remove the chicken with tongs and set aside in a bowl. Remove the bay leaf and discard.
Mash butter and flour together (thickening paste) to make a smooth paste and set aside.
Combine flour, baking powder, and salt in a bowl for the dumplings. Cut in the cold butter until you have a powdery mixture, similar to cornstarch. Set aside.
Pour your heavy whipping cream into the dumpling mixture and stir until combined. Drop the dumpling dough by scoops into the boiling stew. I used a cookie scoop which worked great!
Cover the pot with the lid and leave the steam vent open.
Choose the slow cooker function and simmer on low, covered, for about 15 minutes. Use a toothpick to check if the dumplings are done; if they are it will come out clean.
