{Dairy Free, Gluten Free} Broccoli Cheese Soup Recipe

- 1 Head Cauliflower
- 1 Head Broccoli
- Box Of Vegetable Stock
- 3 Carrots
- 1 Can Coconut Milk
- ½ Cup Nutritional Yeast
- ½ Teaspoon Garlic Salt
- ½ Teaspoon Sea Salt
- ½ Teaspoon Thyme
- Black Pepper To Taste
- In a large pot, pour ½ the carton of vegetable stock and sliced up cauliflower. Cover and cook for about 15 minutes.
- While the cauliflower is cooking, slice the carrots into desired sized pieces and chop the broccoli.
- Once the cauliflower is tender, utilize an immersion blender and make it into a puree.
- To the pot, add ½ carton vegetable broth, carrots, broccoli, garlic salt, sea salt, pepper, and thyme.
- Stir, cover, and simmer for about 7-10 minutes.
- Add coconut milk and nutritional yeast. Stir.
- Simmer for another 2 minutes.
- Serve.
