{Dairy Free, Gluten Free} Broccoli Cheese Soup Recipe

Ingredients
  • 1 Head Cauliflower
  • 1 Head Broccoli
  • Box Of Vegetable Stock
  • 3 Carrots
  • 1 Can Coconut Milk
  • ½ Cup Nutritional Yeast
  • ½ Teaspoon Garlic Salt
  • ½ Teaspoon Sea Salt
  • ½ Teaspoon Thyme
  • Black Pepper To Taste
Instructions
  1. In a large pot, pour ½ the carton of vegetable stock and sliced up cauliflower. Cover and cook for about 15 minutes.
  2. While the cauliflower is cooking, slice the carrots into desired sized pieces and chop the broccoli.
  3. Once the cauliflower is tender, utilize an immersion blender and make it into a puree.
  4. To the pot, add ½ carton vegetable broth, carrots, broccoli, garlic salt, sea salt, pepper, and thyme.
  5. Stir, cover, and simmer for about 7-10 minutes.
  6. Add coconut milk and nutritional yeast. Stir.
  7. Simmer for another 2 minutes.
  8. Serve.
