Chicken Pita Pocket with peppers and onions

I think one of the big factors that keep people from changing to a healthier diet is fear of too much change. Many people know that their diet could use improvement, but when looking at diet and health foods, they are nearly unrecognizable which seems like too big of a leap. I confess that I sometimes fall into the trap of being afraid to try foods that are dramatically different from what I’m used to. Thankfully, there are brands like Brownberry® breads that are similar to foods that we’re all used to, but with less calories and more nutrition.

I grew up eating white bread and have continued to buy white bread out of habit as an adult. Yet, bread rarely has much flavor so changing to Brownberry® breads didn’t seem too scary. My most convenient grocery store is a Meijer and I found a few Brownberry® options that I was eager to try. I purchased Brownberry® PocketThins and 12 grain bread but there were a few others to choose from as well.

Brownberry® 12 grain bread is made with whole grains, so you get 26 whole grains for every 2 slices. The bread has no high fructose corn syrup, no artificial colors or flavors and has 5g of fiber in every 2 slices.

The 12 grain bread loaf is a bit shorter than other breads that I’ve purchased, but each slice is wider as well. They are perfect for making big sandwiches or toast.

BrownBerry PocketThins pita pockets

The PocketThins are 100% whole wheat and are 100 calories per pocket. The package included four PockeThins that are designed to be torn in half. Each pocket contains 19 grams of whole grain and 5 grams of fiber. In the past I would use flour tortillas to make chicken wraps, so I decided to alter my recipe by using a whole wheat pocket thin to contain the ingredients.

I usually make this recipe with plain chicken breast, but the day that I went shopping the deli had chicken tenders pre-made for 60% off, so I got a six pack for $2 and decided to use those this time which made this a really quick meal to make.

This recipe makes 4 pita pockets

Ingredients:
2 chicken strips (roughly palm-size each)
1 medium onion (I used a sweet onion but I also use white onions sometimes)
1 green bell pepper
Shredded cheddar cheese to taste

Instructions:
Bake chicken until finished. In my case, my chicken strips were pre-cooked so I just left them in the oven for about 5 minutes to warm.

Cut chicken into bite sized pieces, or shred.

Green pepper and onion

In a frying pan on the stove toss in chopped onion and green pepper with a small amount of oil or butter (1 teaspoon did the trick for us) and heat until onions are transparent and green peppers are soft.

Divide Brownberry® PocketThins in half to create two pockets.

Chiken and veggies pita pocket

Fill the PocketThins with a layer of chicken, then a layer of onion & pepper, then a layer of chicken, etc until full.

Sprinkle cheese over top of pocket to taste.

The Chicken Pita Pocket was delicious, I didn’t notice any real taste difference when compared to a tortilla or any other bread but the PocketThins made it a easier to eat because the pockets contain the ingredients effortlessly. They would be perfect for young children who struggle to keep a tortilla shell wrapped, but they’re also a great option for adults looking for a healthier option. These chicken pita pockets will definitely be staying in our regular dinner meal rotation.
