This week, Nutrisystem has taught me to expect the unexpected. I found myself in a situation where I had to eat breakfast at a restaurant and needed to know how to choose healthy options. I put some of my new knowledge to the test- I asked for a veggie omelet with egg substitute and no butter. I requested to not have the included sides of pancakes, hash browns, or toast. I also stuck to what I am learning is a healthy size portion. I think I did pretty well with my choices.

This week, my measurements showed a loss of 0 in my upper arms, 0 in chest, 1.5 in waist, 1.0 in my hips, .5 in my thighs, a weekly total of 3 inches and an overall total of 9.5 inches. I also lost 2 pounds, a total of 13.2 pounds!

Next week, I am going to experiment with some of the mouthwatering recipes I found on the Nutrisystem website. I thought I was only “allowed” to eat the packaged food that had been sent to me along with my fruits, veggies and so on. It was a surprise to not only find recipes but, also recipes that were appealing.

The first Nutrisystem website recipe I want to try is the- Chipotle-Lime Fajitas with Grilled Veggies

Ingredients-

Calorie-free pan spray, as needed

5 oz. beef flank steak, fat trimmed off

1 Tbsp. salsa, divided

2 tsp. cilantro, fresh, minced

1 tsp. lime zest, fresh

1 tsp. chipotle peppers in adobo sauce, seeds removed, minced

2 to 3 cloves garlic, fresh, minced

1/2 tsp. cumin

1/2 tsp. black pepper

1 small onion, sliced in thick slices

1/2 large red bell pepper, seeds and core removed

1/2 cup mushroom caps, unsliced

2, 6″ to 8″ whole-wheat tortillas

 

Directions-

1. Place beef in medium-size Ziplock-type bag. Whisk together in a small bowl, half the salsa, cilantro, lime juice and zest, chipotle peppers, garlic, cumin and pepper. Pour over beef, close bag, and shake back and forth several times to coat meat. Refrigerate beef for 2 hours minimum, turning meat several times to marinate all sides evenly.

2. Spray remaining vegetables with pan spray and grill or broil until softened and charred.

3. Remove meat from marinade and grill or broil meat to desired temperature. Discard the marinade.

4. Slice meat and divide between the two tortillas. Top each with remaining salsa and grilled vegetables. Roll up the tortilla and enjoy! Recipe yields 2 servings.
