This week, Nutrisystem has taught me to be patient, persistent, and peaceful. I have a fair amount of stress in my life right now. I actually had a panic attack a couple weeks ago that sent me to the ER for a few hours. In the past, this stress would have lead me down a destructive path of overeating. However, this time I actually found myself doing the opposite. Over the last two weeks, I have missed meals/snacks because I completely lost my appetite. I exercised as many days as my body would let me and drank lots of water. Thankfully, in the last couple days I have felt my strength return.

Evidently, the stress of the last week affected me more than I even thought because it shows in my numbers. I lost .6 pound which brings my total to 18.2 pounds and 13.5 inches lost in 6 weeks.

Next week I am going to focus on being patient with my body, persistent in my weight loss plans, and try to be more peaceful in life.

 

Now that we are just a couple days away from October, (where did the summer go?) I want to share a recipe with you that makes me think of Fall spices and family time. It is becoming really obvious that Fall is upon us in Oregon because the mornings are cool and foggy. The transition in seasons has me thinking about weekends when my Husband usually makes a big, hot, yummy breakfast for us. Although his recipes are delicious, they are often full of calories. I cherish our family breakfast time but want to improve the health of our meal. My plan for tomorrow is to get up early and try the Nutrisystem Banana Pancake recipe.

Nutrisystem Banana Pancakes-

Ingredients
1 packet Equal sweetener
Olive oil
1 medium Banana
1 pkg Nutrisystem Pancake Mix packet

Directions
1. Combine pancake mix and sugar free sweetener, and prepare according to package directions. *I am going to add a little nutmeg and/or cinnamon to my batter.

2. Slice the banana into 10-12 slices.

3. Heat the olive oil in a skillet and spoon the pancake mixture in, forming two pancakes.

4. Place 5 to 6 banana slices on top of each pancake.

5. When bubbles start to form around the edges of the pancakes, flip and cook until golden brown on the second side.

These would be delicious with other fresh fruit like blueberries, peaches or strawberries in place of the banana. I think my kids would like them with applesauce or pumpkin.
