It’s hard to believe that labor day is here already. We are planning one last cookout with our family for the summer. We will be grilling, and we’ll both be eating just a single brat or hot dog to keep things low calorie and healthy. My dad mentioned how he’s going to make potato salad. I didn’t really think twice about it because Ryan and I neither one care for potato salad anyway. However I thought it was clever timing when I saw on the Nutrisystem Leaf site that they shared a healthier way to make potato salad! I thought I would share for those of you headed to cookouts who do like potato salad.

Mayonaise is a big part of what makes potato salad unhealthy so swapping for greek yogurt, or at least a reduced-fat version of mayo is a great way to save major calories. While potatoes have health benefits, eating a lot can really pack on the calories. So they recommend doing 1/2 potatoes and 1/2 mashed cauliflower to lighten things up. See the full post for all five ideas, but those two stood out to me as the most unique and clever.

    Wow, very helpful tips on how to lighten up potato salad! I actually just made mine last week and it calls for a full 5lbs of potatoes and 1 1/2 cups of mayo. I definitely want to try Greek yogurt sometime. Thanks for sharing! 🙂

    I have a potato salad that uses a vinegar dressing. It’s better for BBQs because it can sit out longer.
