I completely forgot to tell you, a couple weeks ago, I earned my FIRST Nutribear. What is a Nutribear? Every time you lose 10 pounds, Nutrisystem sends you a bear marking your achievement; it’s a thoughtful way to support you along your journey. Each Nutribear has a motivational name and a message of encouragement. Along my journey, I WILL get to know Nutribears- Pound, Commitment, Community, Determination, Encouragement, Focus, and finally my Goal bear. I look forward to meeting them all!

This week, my measurements showed a loss of 0 in my upper arms, .5 in chest, 1 in waist, 1 in my hips, .5 in my thighs, a weekly total of 3 inches and an overall total of 13.5 inches. I also lost 3.8 pounds, bringing my total to 17.6 pounds!

Next week, I want to try some exercises other than walking. I live in Oregon; the rain is about to begin and last for the next nine months. I need to find some exercises that I can do indoors. I am going to start by dusting off a few different exercise DVDs and finding some that fit into my crazy Mom schedule and fit my workout needs. By doing this, I hope to keep exercising fun and to continue pushing my body to show results.

Today I want to share the Mediterranean Chicken & Basil Pizza recipe I found on Nutrisystem’s website.

Ingredients-

2 tbsp. Sun-dried tomatoes, julienne cut

2 oz. Grilled chicken breast strips, cut into even smaller strips

2 tbsp. Feta cheese crumbles

5 large Fresh basil leaves, up to 6 leaves

1 pkg. Nutrisystem Thick Crust Pizza

1 clove Garlic

2 tbsp. Shredded Sargento’s Reduced Fat Mozzarella

2 tbsp. Walden Farms Calorie free Ranch Dressing

 

Directions

1. Open Thick Crust Pizza package and set the tomato sauce aside.

2. Mix the ranch dressing and minced garlic together in a small bowl and spread on the pizza crust.

3. Sprinkle the Nutrisystem cheese topping and shredded mozzarella on the crust.

4. Top with basil leaves, sun dried tomatoes, diced chicken strips and feta crumbles.

5. Place on a cookie sheet or small pizza pan and bake at 425 degrees for about 12 minutes.

6. Allow to cool for about 1 minute and cut into 4-6 slices.

Counts As- 1 Dinner + 1 Extra: Limited + 1 Power Fuel + 1 Vegetable
