This week, I have learned that not eating enough of the right foods can be as bad as eating to much junk. I have not been eating enough this week. I have missed veggies, fruits, and proteins on a regular basis. I don’t want to whine but, I am still struggling with stress. Recently a family member was given a tough medical diagnosis and I am not dealing with it well. Rather than over eating (like I use to when stressed), I am missing meals. I also haven’t been very good about drinking all of my water. I need to remember that I can only control so much in life and that it is OK to “let go” of the rest. I need to remember my health is also important.
While I am working through the stress, Nutrisystem has been something I could count on…something I control. It has been nice to not have to think about my meals, I grab a Nutrisystem meal, heat, and eat.
This week’s measurements showed a loss of 0 in my upper arms, .5 in chest, 0 in waist, .5 in my hips, .5 in my thighs, a weekly total of 1.5 inches and an overall total of 18 inches. I had another week where my weight stayed the same so my weight loss total is still at 20 pounds.
I have to admit, in the past when I have heard people say that exercise it a great way to relieve stress, I laughed at them….but, NOW I get it. While I am on the treadmill or working-out to a DVD, I am in the zone and temporarily able to turn off my mind. I am going to work on reducing my stress levels this week by exercising more. That will be a win/win since it will help burn calories, strengthen muscles and help with stress and mindset.
With it being football season, I wanted to share a recipe that will allow you to be a part of the fun festivities while sticking to your healthy foods. I found a recipe for Mozzarella Sticks on the Nutrisystem website.
Mozzarella Sticks-
Ingredients
1 pkg Nutrisystem Cheesy Homestyle Potatoes Mix
1 Low-fat string cheese
1 tbsp. Warm water
Cooking Spray
Directions
1. Mix the water into the Nutrisystem® Cheesy Home-style Potatoes Mix so that it forms a dough. You may need to adjust the water amount. Add more if it is crumbly. You want a consistency that can be rolled into a ball or patties.
2. Cut the string cheese into quarters (once in half each way, long and short).
3. Divide the dough into 4 parts, making each part into a thin patty.
4. Wrap the dough around the quartered cheese stick like a pig in a blanket, but don’t leave the ends of the cheese exposed. Make sure all cheese is covered in dough.
5. Spray a hot pan with cooking spray and fry the sticks on all sides until brown.

I think the cheese sticks sound yummy. I’m sorry you are going through a stressful situation but you are doing great with your weight loss.









I could not do the potato as potatoes are migraine triggers for me. But this gives me a great idea for at home healthier cheese sticks! A trick for those that still crave the deep fried foods, I deep fry in olive oil. It is more expensive but a good for you oil, so it isn’t quite as bad in the long run and you still get that delightful crispiness 🙂
