It was another busy week for me. My week was full of early spring cleaning inside and out. We had a couple days of nice weather so I spent as much time outside gardening as I could. Now the weather has turned cold, wet and windy so I moved my energy indoors and started cleaning, sorting, organizing and rearranging our home. Just as I was finishing giving our rooms a new fresh look, I came down with a cold. I haven’t been able to exercise the last couple days but have done very well with my food and water this week.
Yesterday, I received a new shipment of Nutrisystem foods. I am so excited because we get to have our fresh frozen dinners again. I noticed a few new foods in my shipment- Chicken Enchilada, Salisbury Steak, Sweet & Sour Chicken, Mushroom Stuffed Chicken and last but not least Buttermilk Waffles. Yum!
My measurements stayed the same this week. I have lost a total of 33 inches. My scales showed a loss of .8 pounds. This brings my total to 37.4 pounds lost. I am so close to my 2/3 goal and the next Nutribear…they will both be mine next week!
Today I want to share with you a Quinoa Salad recipe I found on the Nutrisystem website.
Ingredients
¼ cup diced roasted zucchini
¼ cup diced roasted red bell pepper
1/8 cup crumbled or shredded light cheese of your choice
¼ cup washed quinoa
¼ tsp. Mrs. Dash Table Blend
3-4 cloves roasted garlic
½ cup low sodium chicken stock
¼ tsp. Ms. Dash Garlic Pepper
1/8 tsp. Mrs. Dash Chipotle Lime
Directions
Cook quinoa with first 5 ingredients. Bring to boil and then simmer on low for about 20 minutes or until water evaporates. Add and mix remaining ingredients.

Hello, my name is Laurie. My family and I live near the Oregon coast. When we aren’t at work, in school, or on the volleyball court, we enjoy traveling, cheering for our favorite sports teams, playing outdoors, and checking off items on our bucket list.
