AcuRite Digital Timer ~THM Chocolate Chip Zucchini Cake Recipe + Giveaway (US & Canada) 8/23

It’s Summer and many gardens are blooming. While we had trouble with a deer at the beginning of the season and had to re-plant all of our pepper and tomato plants, our zucchini harvest is looking plentiful. With everyone’s garden goodies, it’s fun to spend some time in the kitchen creating. I shared my Chocolate Chip Zuchhini Cake Recipe last year with a Trim Healthy Mama Twist. Since it’s been such a huge hit, I’m going to share it again, this time with the typical ingredients and the THM way.
Chocolate Chip Zucchini Cake Ingredients:
Typical THM Style
~2 1/2 Cups All Purpose Flour ~1 3/4 Cups Almond Flour
~ ~3/4 Cup Coconut Flour
~1/4 Cocoa Powder ~1/4 Cup Cocoa Powder
~1 teaspoon Baking Soda ~1 teaspoon Baking Soda
~1/2 teaspoon Baking Powder ~1/2 teaspoon Baking Powder
~1/2 Cup Milk ~1/2 Cup Almond Milk
~1 teaspoon Vinegar ~1 teaspoon Vinegar
~1 Cup Chocolate Chips ~1 Cup Lilly’s Stevia Chocolate Chips
~1 Cup Butter (2 Sticks), Melted ~1/2 Cup Butter (Melted)
~(Sub option of half butter/half coconut oil) ~1/2 Cup Coconut Oil (melted)
~1 1/2 Cups Sugar ~1 1/2 Cups Truvia
~2 Eggs ~2 Eggs
~2 teaspoons Vanilla ~2 teaspoons Vanilla
~2 Cups Grated Zucchini ~2 Cups Grated Zucchini
~Preheat oven to 350 degrees
~Combine flours, cocoa powder, baking soda, and baking powder in a bowl. Set aside.
~In separate bowl, combine milk and vinegar. Let combo sit for 5 minutes. Then add to the first bowl.
~Add butter (and coconut oil), sugar (or Truvia),eggs, and vanilla to the bowl. Stir till combined.
~Fold in Zucchini and half the chocolate chips.
~Sprinkle remaining chocolate chips over the top.
~Bake for 45-60 minutes or till done.
~Cool slightly before cutting.
~Can be topped with Cool Whip or Sugar Free Ready Whip for THM version.
Our stove is about 12 years old but I’ve actually worn the timer button out. It no longer “reads” when that button is pushed. So I have turned to AcuRite’s Red Digital Timer to help. It’s simple to use functions allow me to easily time minutes and even seconds (since we all know that seconds matter when cooking and baking certain foods.)
