My daughters LOVE to bake. They are constantly asking if they can bake cookies, cakes, pies, you name it. They are the reason I buy baking supplies and wet wipes in large quantities! Lol.

Last week, our neighbor gifted us with a shoebox full of freshly picked blueberries. The blueberries were some of the best I have ever had, part of that was because they were straight off the plant and the other part was because I didn’t have to sit in the sun picking them myself.

Savannah (11 years old) asked if she could use the blueberries while baking a loaf of Lemon Blueberry Bread. Who could say no to that offer?! Savannah’s Lemon Blueberry Bread turned out fantastic. She gave me permission to share the recipe with you.

Ingredients:
1/3 cup of melted butter
1 cup white sugar
1/4 cup lemon juice freshly squeezed + 2 TBS fresh grated lemon zest
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
1 cup blueberries

Directions:

Preheat oven to 350°F. Then butter or oil an 8×4 inch loaf pan.
In a mixing bowl, beat together butter, 1 cup sugar, lemon juice and eggs. Then add the milk and mix.
In a separate bowl, combine your dry ingredients- flour, baking powder, and salt. Once blended, stir this into the wet ingredients bowl.
Finally, fold in the lemon zest and blueberries. Don’t over mix! Pour batter into prepared pan.
Bake in preheated oven for about 60 minutes, until a knife inserted into the center of the loaf, comes out clean. Cool and serve.

Savannah’s Lemon Blueberry Bread was the perfect treat on a hot summer day. The fresh lemon and blueberries really stood out and gave it a burst of flavor.

Lemon Blueberry Bread would be a nice addition to breakfast or brunch. It would also be great served with tea during the afternoon.

    This looks delicious. we just picked 2 1/2 gallon ziplock backs of wild blueberries and plan to pick more to can blueberry pie filling and to freeze for pancakes during the winter months. I am always looking for something new when the blueberries are fresh though and I think my family would really like this. Thank you for sharing.

    This looks really delicious. I think too it would have the perfect blend of tart and sweet. There is nothing better than fresh picked blueberries. We don’t have blueberries here much, but goodness they are god!

    Kids are learning to cook earlier all the time. Last kid cooking show I saw 7 and 8 years on it. My friend is cleaning out of freezer and sent me home with a couple of bag of blue berries. I think I will make a couple of loafs of this bread. I will cut up most of it and freeze in ziplocks. Later on I can just reach in and pull out a bag for breakfast or later in the day for a snack.
