My step-father was diagnosed with diabetes earlier this year. Since then, my mom has been doing her best to look for healthier alternatives to their favorite foods, one of them being pasta.

When I learned about a company called nuPasta, that makes a healthy pasta alternative,  I decided to reach out for a review. NuPasta sent me a generous sampling of their products. I invited my mom to try the products with me. The following are her words.

I’m always looking for a way to make some of my “go to” meals a little healthier. Our family loves pasta but pasta doesn’t necessarily love us. I have a tendency to be on the borderline with my LDL cholesterol and my husband was recently diagnosed with diabetes as well as high blood pressure.

When I was offered the chance to review nuPasta, I jumped at the chance to see if this might allow me to make a healthier version of some of our favorite pasta dishes.

Each package of nuPasta is considered to be one serving. I received the nuPasta Low-Calorie Pasta Konjac Fettuccine, Konjac Spaghetti, and Konjac Angel Hair. All three varieties are 35 calories per serving so much less than our “normal” pasta.

These Konjac nuPasta varieties are gluten-free and do not contain sugars or non-fiber carbohydrates. They are non-GMO and a good source of dietary fiber.
For those of you not familiar with Konjac, it is an herb that grows in parts of Asia. It is used as a gelatin to thicken foods, is used in weight management, and is used in Chinese Medicine.

The instructions say that the nuPasta is packed in a mild alkaline solution to prevent food spoilage. The individual containers of nuPasta do not need to be refrigerated until they are opened.
Before using the nuPasta, the liquid needs to be drained from the container and the food item needs to be rinsed well. I put mine in a colander and ran water over it careful to stir it with my hands so I wouldn’t break the “noodles”.

My husband isn’t very adventuresome when it comes to food so I thought I would turn our meal into something he was familiar with. I melted some low fat cheese, added some spicy salsa, cut up small pieces of deli meat and then added the nuPasta just long enough to heat everything up. I didn’t tell him what he was eating until after he was done and then I asked him if he liked it. He did~!
I’ll be honest, the texture of the nuPasta was a little something for me to get used to but by adding the other ingredients, I soon forgot that it wasn’t my regular pasta.

When I investigated more about the benefits and side effects of Konjac, I noticed that it can aid in bowel movement irregularity, lower LDL cholesterol, help with diverticular disease, and can increase your probiotic count. It wasn’t until after we ate our first meal with nuPasta that I noticed on one website, it says to contact your doctor if you are on a diabetic insulin program. I will make a point of doing that before I make any more meals with this product but my husband monitors his blood sugar level a lot and we did not notice any change after he ate the nuPasta meal.

I, Laurie, also prepared a dinner of nuPasta. I made ours into chicken alfredo. It was rich, creamy, and gone in just a couple of minutes!
