This week, Nutrisystem has taught me that I need to treat myself better. The mental image I have of myself, my mantra, my “me-time” they all play a major role in my weight loss. I have been in sort of a “funk” for a few weeks now and my results show it. I have done well with my foods, water, and exercises yet my weight loss results have significantly slowed. I continue to believe in the program and know that eventually I will see results on the scale.
This week, my measurements showed a loss of .5 in my upper arms, .5 in chest, .5 in waist, .5 in my hips, 0 in my thighs, a weekly total of 2 inches and an overall total of 15.5 inches. I am not sure if I lost any pounds this week because my scale died….well, I think it died. I stood on it and it told me one weight, then I stepped off and back on, and had gained 5 pounds. So, I will be investing in a new scale.
I am down a complete clothing and undergarment size. I can see my face slimming too. I have had a few people comment telling me that they can also see the changes.
Next week I am going to focus on improving my outlook. I am reading the lessons in the Nutrisystem Mindset Makeover and will complete all of the activities.
I am in the mood for comfort food. I think Nutrisystem’s Cream Cheese Filled Pumpkin Muffins will be a perfect breakfast treat.
Ingredients
2 tsp. Pumpkin pie spice
1/2tspSalt
1 tbsp. Ideal brown sugar substitute
1/4cupEgg Beaters
1 tbsp. Fat free cream cheese, per muffin
1 pkg. Nutrisystem Pancake Mix
1 tsp. Vanilla extract
1/2tspGinger
1/2tspBaking soda
1/2tspCinnamon
1/2cupPumpkin puree
Directions
1. Mix the dry ingredients.
2. Mix the wet ingredients.
3. Combine the wet and dry ingredients.
4. Fill 3 muffin cups with about 1/4 cup each of the batter. Place 1 Tbsp. fat free cream cheese in the middle of each muffin and press down gently. Top with the remaining batter.
5. Bake at 350 degrees F for about 15-20 minutes until the top is firm and springy.
6. Let the muffins cool for at least 10 minutes (the cream cheese remains hot for a long time).
Chef’s notes- This recipe makes 3 good sized muffins and is quite filling. If you want them to taste like the ones sold by a major coffee shop chain, be sure to add a pinch of cardamom powder.
