This week, I want to share with you some of my favorite Nutrisystem lunches. My absolute favorite is the steak and cheese melt. This handy little pocket sandwich has beef steak, onions, peppers, mushrooms and reduced fat mozzarella cheese. I really like the spices used. It is a very comforting meal for me. My family finds it really funny that my favorite Nutrisystem meals are the beef meals. Prior to Nutrisystem, I really didn’t each much beef.

When I at home, I also like the roasted veggie pizza, chicken tacos, and chicken fajita melt. When I am on the go, I grab the trail mix bar, double chocolate caramel bar or fudge graham bar. Nutrisystem lunch bars are delicious and super convenient.

 

My measurements didn’t have a significant change this week. In the last 18 weeks, I have lost a total of 28 inches and 29 pounds. I am so close to my half way point (30 pounds). I am going to really push myself this week to see if I can get over that half-way point.

 

This week, I would like to share the Nutrisystem Cheesy “Scalloped” Potatoes and Ham recipe found on their website.

Ingredients

1  1/2 oz. low sodium deli ham, diced

1   tbsp. reduced fat Parmesan cheese

1   pkg. Nutrisystem Cheesy Home-style Potatoes

Directions

1. Set the oven to broil.

2. Spray an individual oven-safe casserole dish with cooking spray.

3. Combine the Cheesy Home-style Potatoes with the ham.

4. Spread the potatoes in the casserole dish and top with Parmesan cheese.

5. Place the dish under the broiler until the cheese is melted and bubbly.

Counts as- 1 Lunch + 1 Power Fuel
