Spring is coming! This morning, I awoke to the sun shining in our bedroom windows and the birds were chirping. As I looked out the window, I could see dew drops glistening on the grass and the trees appeared to have budded overnight. It was a wonderful moment. It completely refreshed my energy level.
Spring is a great time to dust off those salad recipes you have had stored all winter. Today I am going to make a Black Bean And Rice Salad.
Ingredients
1 Tbsp. cilantro
1 pkg. Nutrisystem Black Beans and Rice
¼ cup fresh pico de gallo
¼ cup diced Roma tomatoes
¼ cup diced green onions
*I also like to add a diced bell pepper
Directions
1. Prepare the Nutrisystem Black Beans and Rice entree according to package directions. Refrigerate until cooled, or make the night before.
2. In a bowl, stir together the cooled entree, pico de gallo, tomatoes, green onions, and bell pepper. Sprinkle with cilantro if desired.
This Black Bean And Rice Salad has a nice balance of heat and freshness. The beans and rice add a nice texture, while the veggies add a bright flavor profile.

This week, I lost one pound. This brings my grand total to 28 pounds and 49 inches lost. I am almost 60% of the way to my goal. This journey has really been a blessing. I feel so much better. I am excited to see how the rest of this journey unfolds.

Hello, my name is Laurie. My family and I live near the Oregon coast. When we aren’t at work, in school, or on the volleyball court, we enjoy traveling, cheering for our favorite sports teams, playing outdoors, and checking off items on our bucket list. We are lucky in that both sets of our parents, as well as our siblings and their families, live within an hour of us. We get together often to help one another out, celebrate milestones, and go on adventures together.

Oh spring.. I wonder where it can be? I just shoveled 8 inches of snow! This salad sounds quite good. I am a huge fan of beans and rice. I think they just go together well. This salad looks easy and is a clever way to use a Nutrisystem meal and make it a bit different.

Now this looks pretty interesting to me. I’ve been trying to get more healthy foods, especially black beans into my diet…but couldn’t find a decent recipe. Not to mention looking for some weight loss! I’ve been toying with the idea of Nutrisystem for a while, and this really looks delicious. Might be time to give it a go. Thanks for that wonderful photo, you may have just inspired to start my own healthy journey! : )

This looks yummy! We make a similar recipe with steak and mexicorn. The kids don’t tend to eat it but all the adults do – plus it’s great rewarmed the next day for lunch.
