My husband and I try to schedule a date night every couple of months. Sometimes we enjoy going out for a meal and other times, we prefer to stay in. For our next date night in, I am going to prepare Nutrisystem’s recipe for Ground Turkey and Veggie Curry With Brown Rice. This recipe is perfect for date night; it is full of flavor!
Ingredients:
¼ cup onion, chopped
1 garlic clove, chopped
2 tsp. olive oil
8 oz. lean ground turkey
1 tsp. curry powder
½ tsp. ground coriander
½ tsp. cumin powder
Pinch turmeric
Pinch red chili flakes
Black pepper, to taste
½ cup carrot, sliced
½ cup zucchini, quartered and sliced
½ cup (4 oz of a can) crushed tomatoes, no salt added
2 Tbsp. water
1 cup cooked brown rice
Directions:
Cook brown rice according to package directions. Set the cooked rice aside.
In a large skillet, heat oil on medium-high and add the chopped onions. When onions are soft, add chopped garlic until both are lightly browned. Add ground turkey and all spices. Stir often and cook the meat until browned. Stir in carrots, zucchini, tomatoes, and water and bring to boil. Turn heat to low, cover, and simmer for about 15 minutes or until the carrots and zucchini are soft. Taste and add more pepper or chili if desired.
Serve with brown rice. (Note: Spices listed make for a non-spicy curry.)

You know I dont think I have ever even tasted curry I always figured it would be spicey . This looks good. Date night isnt so much about what you eat or watch, just spending some time together reconnecting. This looks like a nice simple meal you both can enjoy.











That sounds like a great meal. I am going to make it. I love curry but do not like it too spicy so this should be perfect for me. Thank you for the recipe.
