This week flew by for me. We had wonderful spring-like weather in the afternoons. My Daughters and I were able to get out for some long walks and scooter rides.
I had a great week with Nutrisystem as well. My food, water and exercise all seemed to come really easy this week.
Remember a few weeks ago when I said I woke up on a Saturday morning with a new inner peace. Well, the same thing happened this Wednesday. I have a new understanding and appreciation for nutrition. I have a new awareness of ingredients and their purpose in our foods. I am learning what to look for on ingredient labels and how to decode them. I look forward to learning how to make better food choices and how to prepare healthy, flavorful foods.
This week’s measurements show a loss of 0 in my arms, .5 inch in my chest, 0 in my waist, .5 inch in my hips, and .5 inch is my thighs. A weekly total of 1.5 inches lost and an overall total of 33 inches. My new bathroom scale arrived just in time for this week’s weigh-in. Just as I had feared, theirs a discrepancy in my weight between the two scales. The new scale says I have lost 36.6 pounds (the old scale says 37.2.) I am bummed that there is a difference but, now I know that I will have an accurate reading from here on out.
This week’s recipe is Mexican Style Lettuce Wraps. I love wraps…especially when they have delicious health ingredients.
Ingredients
½ tbsp. salsa
1 pkg. Nutrisystem Flame Broiled Beef Patty
1 tsp. taco reduced sodium seasoning
½ cup black beans, drained and rinsed
¼ medium avocado, sliced, optional
1 slice Jalapeno, sliced, to taste, optional
Directions
1. Follow the heating directions for the Nutrisystem® Flame Broiled Beef Patty.
2. Place the prepared burger, the taco seasoning and one tablespoon of water (or jalapeno juice) in food processor and pulse until lightly ground.
3. In the meantime, have the beans, salsa and avocado ready for assembly.
4. Place the beef mixture on the lettuce leaves, then top with the salsa, beans and avocado. Add optional jalapeno, to taste.
5. Wrap up the leaves and eat them like a taco.
Yields: 1 serving of 3 leaves

I am going to take this lettuce wrap idea and use it with the Nutrisystem Vegetable Fajita mix. I can’t wait for dinner time!

Hello, my name is Laurie. My family and I live near the Oregon coast. I love lettuce wraps and am always looking for a new variety of them to try out. While I’m not on Nutrisystem, I still appreciate the great recipe.

I hate the differences between scales too. But lets focus on the weeks that come “easy” as you said. Congrats on your success so far!

Congratulations on the weight loss! I always get bummed switching scales too, but sometimes it needs to be done.









Regardless of the difference in the scale you definitely need to be proud of what you’ve lost so far! 36 pounds lost is AMAZING! Good for you!
