This week had its highs and lows. Last Saturday, we celebrated my little girls 4th birthday. It was fun. Where did those 4 years go? Then on Sunday, my Mom and two Sisters-in-law joined me for the Biggest Loser run/walk event. It was so much fun. Thanks to Nutrisystem and my hard work, I was able to jog across the finish line! Thirty-five weeks ago, that probably wouldn’t have happened. I completed the race and felt great afterward. It was a super weekend.
As the work week started, I had a sore throat that was getting pretty unbearable. I decided to head to the doctor’s office. Yep, I have strep throat. I was put on antibiotics and the doctor suggested I take it easy for a while. I think today is going to be the last day I can handle taking it easy…I am ready to get back out and exercise.
With my “easy” schedule this week, I didn’t see much change in my weekly totals. My measurements show a loss of 0 in my arms, .5 in my chest, 0 in my waist, 0 in my hips, and .5 in my thighs. A weekly total of 1 inch and an overall total of 39 inches! I didn’t lose any weight this week. My overall weight loss total is 44.4 pounds.
Today, I want to share an Asian Tuna Wrap recipe I found on the Nutrisystem website.
Ingredients-
1 pkg. Nutrisystem Tuna Salad
1 piece Flatout reg. Flatbread
½ cup spicy salad blend sprouts
¼ cup water chestnuts, diced
2 tbsp. red bell pepper, diced
2 tsp. honey
1 tsp. Kikkoman Soy Sauce, low sodium
1 tbsp. fresh ginger, peeled and minced
1 stalk green onion, diced
1/4 tsp Chinese 5 Spice Powder
3 tbsp. fennel, minced
Directions-
1. Open the Nutrisystem® Tuna Salad and scrape the contents into a small bowl.
2. Add all the remaining ingredients, except the flatbread and the sprouts, then toss mixture well to mix.
3. Lay flatbread on a flat surface. Spread the tuna mixture evenly over the bread, edge to edge.
4. Sprinkle the salad with sprouts or cabbage, edge to edge.
5. Beginning at one end, roll up flatbread tightly, rolling away from you and pushing the ingredients back into the bread as you roll.
6. Place the roll on a serving plate, seam side down, and slice in half.
7. Serve immediately.
Yields: 1 Serving
Counts as- 2 Extra: Limited + 1 Lunch + 1 Vegetable

Hello, my name is Laurie. My family and I live near the Oregon coast. When we aren’t at work, in school, or on the volleyball court, we enjoy traveling, cheering for our favorite sports teams, playing outdoors, and checking off items on our bucket list. We are lucky in that both sets of our parents, as well as our siblings and their families, live within an hour of us. We get together often to help one another out, celebrate milestones, and go on adventures together.
