About six months ago, I heard about the “Trim Healthy Mama” plan from a friend.  I didn’t completely understand it so I ended up purchasing the book.  My husband lost about ten pounds within the first couple weeks and, since I was pregnant, my goal wasn’t to loose at the time.  

I did, however, maintain the same weight from about 5 months to 7 months which has never happened with any previous pregnancy.  In the end, I gained about 25 pounds total but lost all but about 8 pounds within a week of delivery.

Again, that has never happened before either!  So now our little one is 3 months old and I want to get serious again and return to the Trim Healthy Mama bandwagon a little more strictly.  

I will be the first to admit that, while not a “Drive Through Sue”, I do go off plan more often than I’d like.  However, I found a great combination for a healthy E breakfast that almost the whole family loves.

A THM mama friend of mine shared a baked oatmeal recipe she found over at Stacy Makes Scents.  However, I did make a few changes as well.  Here is the recipe that I made:

Overnight Baked Oatmeal THM Way (E)

~2 cups rolled oats
~1 cup almond milk
~3 tablespoons applesauce (I use organic apple cinnamon flavored)
~3 tablespoons Truvia
~1/3 cup egg whites
~1 1/2 teaspoons baking powder
~1/2 teaspoon salt (I use celtic sea salt)
~3 teaspoons vanilla
~1 tablespoon cinnamon

Mix all ingredients in a bowl and stir well.  Put in refrigerator overnight.  In the morning, preheat the oven to 350 degrees.   Pour oatmeal mixture into 5 x 7 (or 8 x 8) greased pan.  Sprinkle with blueberries and more cinnamon.  Bake for 25-30 minutes or till crispy and browned on top.  So yummy!

These pancake muffins came out of trial and error.  I intended to make (S) waffles for the family and that ended in a complete messy disaster.  So I decided to go with a recipe that I got from my dad years and years ago and adapt from there to make an (E).  

Plus, I bake them in a muffin tin.  PS> Creative Cookiez Silicone Baking Cups are GENIUS!  I can no longer live without them.  Even goodies right out of the oven release and drop out perfectly every single time.

Muffin Pancakes THM Style (E)

~2/3 cup egg whites
~1 cup milk
~1/2 cup almond milk (or you could do 1 1/2 cups almond milk for THM friendly)
~1/2 cup olive oil (1/2 cup unsweetened applesauce for THM friendly)
~2 cups rolled oats ground into flour
~1 tablespoon baking powder
~3 tablespoons Truvia
~1/2 teaspoon salt (I use celtic sea salt)
~1 Scoop Protein Powder (I use Jay Robb)

Beat egg whites in a separate bowl till soft peaks form.  Set aside.  Combine the remaining ingredients and beat with mixer.  Add egg whites and gently stir together.  Fill muffin liners with batter about 3/4 full.  Bake at 350 degrees for about 15 minutes or till done.  Love not having to stand over a griddle!

    What is a portion size for each of these?

      Hi Jo,

      E meals allow up to 45g of healthy carbs.

      While I’m still learning how to measure things out, I’ve also headed the advice I’ve seen administrators say about eating till full but where you also start to get hungry by the 3 hour mark. For this particular breakfast, I cut the 5×7 pan into 6 good sized squares and eat 2 of the squares along with 5 of the pancake muffins.

    I look forward to trying your Baked Oatmeal. 🙂 I might stir in the baking powder the next morning, though, for the rise effect. Looks like a great E meal at 4 servings, (1/2c oats each).

    I was looking at your Muffin Pancake recipe, however, and thinking it may be a Crossover due to the E sized serving of oats plus the 8T (1/2c) of olive oil.
    (THM Admin) note –
    To fit in an E there would need to be 1t oil or less per serving. So with that much oil you could only have 1/24 of the recipe in an E setting.

      Aleah,
      Is it necessary to add an additional source of protein (for example, turkey bacon or something like that) with the Baked Oatmeal or is it sufficient by itself as an E meal for breakfast? Sometimes I have it with the Big Boy Smoothie–would this be too much?

    This sounds good plus it sounds healthy. I would add cream cheese and blueberries. We have never baked oatmeal as breakfasts need to be quick at my house or suddenly it is lunch time!

      Hi Lisa,

      I just sprinkle the amount our family likes. We typically use about a cup. You can use less or more based on your personal preference.

    I’ve never baked with Truvia but I’d love to try. I buy things on sale and found the 42 oz Mom’s Oats for $1.50 each if you buy 4. I bought several and now I have tons of oats! I don’t eat packaged cold cereal so muffins and morning baked goods with healthy oats are a staple with me. Love those blueberries.

    I really do like these portion controlled recipes. I eeespecially like the baked oatmeal . I have never tried baking it, but it makes sense it would work well. I bet you could even do that with grits and any cooked type cereals!

    I made the baked oatmeal. It was a hit at my house- even for my skeptical THM family members! 😜
    I topped it with a strawberry mixture I had already made. I cooked strawberries with a little vanilla and sweetener and then blended. It was so good topped with this!

      I’m pretty new to THM, but I found the oatmeal bake recipe hard to eat. The texture was somewhat mushy and I didn’t find it very tasteful. Maybe it would’ve been crispier in a larger pan?

        It definitely shouldn’t have been mushy…… I use a Pampered Chef stone pan so I’m not sure what other pans would deliver for results. I wonder if you should try adding some bake time? If bland, perhaps try adding some spices! If your family likes cinnamon, add some extra. 🙂 Or if they like strawberries or another fruit, add that as well. The beauty about this recipe is that it can be tweaked for everyone’s liking!

      Hi Debbie,

      I’ve done that as well when I forgot to prepare ahead of time. There was no real noticeable difference to my family as it was delicious that way too.

    Just tried both recipes this weekend and they were great.

    For the overnight oatmeal, i used muffin tins. Next time I will mix in a full cup of blueberries into the batter because a sprinkle wasn’t enough for our family. So yummy, even the husband enjoyed!

    these look delicious. I think the muffins are a great idea , and would work well for freezing. Make up a batch, freeze, and then have ready made breakfast foods all week at a moments notice!

    I have a 7 x 10 pan inch, the sides only rise about 3/4 of an inch. Would the baked oatmeal rise high enough when baking it to overflow the sides? In your picture it looks like you are using a cookie sheet.

    I have never heard of baked oatmeal or pancake muffins, but they both sound wonderful. I am hungry just reading the recipes. I love blueberries too, so that makes it sound even better. I can’t wait to try both, but my oven isn’t working. I wonder if I could bake these in the toaster oven?

    I’ve never baked the oatmeal any other way but in my toaster oven. It’s always been successful. I store my new set of pots and pans inside my big oven and I just didn’t feel like unloading all of it to bake a small pan of oatmeal. Besides my oven, and for that matter, my whole apt., is electric and for something so small and such a short baking time it seem costly to heat the whole ove. I love my toaster oven. You wouldn’t believe what I’ve managed to cook it it.
