Tomorrow is Mother’s Day. Remember to take a moment to let your mom, aunt, sister, etc. know just how much you appreciate everything they do for you. As a mom, I can tell you, it isn’t about the gifts at all. It is about being loved, respected, and appreciated.
My family and I will be hosting a Mother’s Day brunch. We are having my parents, my in-laws and our neighbors over for a special meal. My two young daughters have selected a special dish they will be contributing to the meal. Savannah is going to make crostinis with salmon spread and baby arugula. Cheyenne has decided to make us all fresh berry and yogurt parfaits. Yum. I wanted to make sure I also offered a small side dish. While looking over the recipes on Nutrisystem’s website, I selected the Air Fryer Frittata.
1 cup egg whites
2 Tbsp. skim milk
¼ cup sliced tomato
¼ cup sliced mushrooms
2 Tbsp. chopped fresh chives
Black pepper, to taste
Preheat Air Fryer at 320° F.
In a bowl, combine all the ingredients.
Transfer to a greased frying pan (which may be provided with the air fryer) or to the bottom of the air fryer (after removing the accessory)
Bake for 15 minutes or until frittata is cooked through.
I don’t have an air fryer. My plan is to preheat my cast iron skillet on 400° F. Once it is hot, I will poor in my frittata mix, turn the oven down to 350° F and bake for approximately 20 minutes. I will keep a close eye on this dish and will remove it when it has cooked through and turned light golden brown.
The recipe as listed above is two servings. Each serving has 75 calories. On Nutrisystem, Count As 1 PowerFuel.
