Being a mom of two soon to be three means that I have a lot to keep track of. I do my best to keep our family out of the fast food lane and eating clean at least 80% of the time. Feeding two little one and myself throughout a busy errand running day can be quite the task especially once you add on trying to keep a healthy lunch and snacks packed for my husband as well. I have a few options that I run though on any given week to make this process easier and I’d love to share them with all of you!
Tip #1 Leftovers
Now this can seem like a no brainer for most but it can be taken a few different ways. I myself am a person who takes the leftovers and has the exact same meal for lunch the next day, its easy and simple and most important quick! My husband on the other hand is a master of leftovers, he’s converted leftover swiss steaks to beef and noodles, leftover chicken into chicken Alfredo, leftover pork into pulled pork nachos. He really does make every leftover a whole new invention every time which keeps my kids interested and and excited about the new meal.
Tip #2 Snacks
I love snacks and they do help to sustain my family quite well. Most often we chose things like fruit and veggies but there are just some fruits and veggies that require more preparation and time that I may or may not have in the mornings. For the days I don’t have time I go ahead and pack snack packs from ReadyPack. With options like ranch with carrots and peas and caramel apple slices I know my kids will be ecstatic about snack time and I will be relived of yet another food related duty.
Tip #3 Prepping Ahead
This is easily the most helpful and most difficult to squeeze in tip I have. If you can set aside some time on a Sunday to prep a majority of the meals and snacks you’ve saved yourself quite the headache by the time each meal time rolls around. On Sundays I usually go through and think of each meal we will have for dinner and what I will have for leftovers on which days. On the days that I wont have a leftover for the next days lunch I will go ahead and throw in a family size chicken thigh pack. I use these chicken thighs as shredded chicken for the week for things like chicken sandwiches, chicken quesadillas, chicken Alfredo, and plain chicken snacks for the protein needy like myself and my daughter. Making extra ground beef can be used the same way with different recipes!
Tip #4 Premade Salads
For the days that I don’t have enough time to prep ahead I turn to something that helps me out but also doesn’t cost me an outrageous amount. I don’t have to worry about the cost and ingredients in a drive thru salad, I don’t have to worry about the effort of prepping a salad ahead of time I know that I can turn to the fridge grab out a healthy and tasty option. My family has no issue taking a salad often with so many different flavors like BBQ Kickin’ Chicken, Caprese, and Caesar.
Tip#5 A Good Lunch Box
Now this may not apply to everyone and honestly I had no idea the impact it could make on our on the go lunch situations until my husband pointed out all the benefits. My husband is a fan of bento lunch boxes, they are compact keep everything all together and offer separation if needed for certain foods. My husband in particular chooses a bento lunch box that has removable compartments inc are something needs microwaved but not everything does, for that reason he also chooses a safe plastic material versus a metal one so that he can have the ability to reheat portions. Some offer storable utensils or double sided utensils which all help out the easy compact and simple on the go meal time.

These are so good, I really like the ideas. I also throw a pack of thighs in the oven and use them all kinds of ways. It makes life easier.

I pack everybody’s lunches; yes still even though two of them are technically adults. I make all kinds of stuff but am not above using redi-packs. Sometimes you just need some time!

Yes, pre-made salads are a lifesaver. By which I mean they save me from having to THINK before coffee. 🙂

Great tips! One of my New Years resolutions is to do more meal prep. These containers look great. I also love those little bite sized sandwiches in your photo. My daughter would love those for school.
These are all fantastic tips, thank you so much for sharing! I often eathink pre-made salads for lunch because they have zero prep and are quick and healthy! Prepping everything for the week in one is something that I have always wanted to do but haven’t yet. I know it would save me a ton of time too, I think I’m finally going to start this weekend.
