This recipe is something my pregnant brain just concocted the other day. My daughter and I have had them three times since. These roll ups are super easy to make, yummy and best of all – toddler approved! These are actually a play on my aunt Karen’s ‘pickle wraps’ that she brings to most family gatherings. Her pickle wraps are made with ham, pickles, and cream cheese wrapped up in a tortilla and cut into little pinwheels. The whole family loves them.

It was lunchtime the other day and I was unsure of what to make. I looked in the cupboard and found tortillas, then looked in the fridge and found the ham and pickles… I added the ranch and… yum! Pregnant mommy approved. My daughter immediately saw what I was eating and wanted one for herself. *Note, if you are feeding these to a toddler you might want to cut your pickles up so there’s less of a chance of them choking on the pickle!

These Ham, Pickle & Ranch Roll Ups are so easy to make. Here’s what you’ll need:
~ Tortilla(s) – I used flour, but fresh whole wheat tortillas could easily be subbed to make these more healthy.
~ Deli Ham – thinly sliced. Turkey could easily be subbed if you prefer.
~ Pickles – I used mini garlic dill pickles I canned myself, but you could use any kind you like.
~ Ranch dressing – I used the ‘good stuff’ out of the bottle. You could easily use homemade for a healthier version.

Lay your tortilla flat, drizzle on some ranch dressing. Spread the ranch dressing out all the way to the edges of the tortilla. I used a kitchen brush to do this, however you could use the back of a spoon. You don’t want this layer to be too thick or it will squish out the ends. Nice and thin will do the trick. Next layer a thin layer of ham over the ranch dressing. Finally, line the pickles up, 1/3 of the way across the tortilla as pictured then begin rolling. Presto! You have lunch – or a yummy snack!

If you are not a pickle lover you can also switch out the pickles for some string cheese. I made them like that for my daughter one day and she seemed to like them just as much as with the pickles on the inside.
