Sunday Brunch – Easy Biscuit Egg Bake Recipe

Breakfast for lunch or any day brunch, there’s plenty of mouth-watering recipes that are great to serve.  I personally love a big brunch.  When we took our summer family vacation back in July, we actually had a brunch meal almost every day.  It was perfect to eat up and be able to get through most of the day before having another meal.  It saved us a lot of time (and money!) by only eating two meals a day while none of us felt deprived either.  A popular time to enjoy brunch for many families happens to be on the weekends.  Whether hosting a Sunday brunch for extended family and friends or just cooking for yourselves, I’m excited to partner with  Nellie’s Free Range Eggs and Cabot Cheese to bring you this yummy recipe!

Easy Biscuit Egg Bake

Sunday Brunch = Easy Biscuit Egg Bake

Ingredients
  • 2 cans crescent rolls
  • 1 dozen Nellie's Free Range Eggs
  • Ham or Turkey Deli Meat
  • 2 tablespoons milk
  • 1 small onion
  • ½ red pepper
  • ½ orange pepper
  • ½ green pepper
  • sea salt
  • black pepper
  • Cabot cheese (in desired flavor)
Instructions
  1. Preheat oven to 350 degrees.
  2. Coat a 9x13 pan with cooking spray.
  3. Press 2 cans of crescent rolls onto the bottom of pan to make a "crust".
  4. In a separate bowl, crack 1 dozen Nellie's Free Range Eggs.
  5. Add 2 tablespoons milk and whisk together until beaten well.
  6. Pour onto crust.
  7. Dice the peppers, onions, deli meat, and Cabot cheese and sprinkle across eggs.
  8. Sprinkle the entire pan with salt and pepper.
  9. Bake at 350 degrees for 20-30 minutes or till done.

This Easy Biscuit Egg Bake offers a great combination of flavors that is always a hit.  Plus, it’s filling too!  I like to serve with some pancakes, muffins and fruit and everyone loves the variety.  Plus, we’re all stuffed until late in the day!  Comfort food at its finest!

    • I used to make it using shredded cheese from the local grocery store and then I made it with Cabot Cheese. My husband didn’t even think it was the same recipe! He couldn’t believe how yummy it was with Cabo Cheese throughout. Truly a winner!
